Genoese Basil DOP is grown, harvested, and refrigerated for use in food production, the kind that brings the quality of the protected designation of origin to your table from large-scale retail outlets.

The plants in the fields, with their characteristic deep green color and intoxicating scent, are carefully harvested and preserved using the most modern technologies to find their place as a renowned ingredient in food preparations.

The usable seeds of Ocimum Basilicum L. are of ecotypes or selections that present the typical characteristics, in particular intense aroma and total absence of mint.

Basil is grown outdoors during the summer months, on natural soil and distributed in rows. Irrigation is abundant and rationalized based on the climate and to reduce water waste and the incidence of disease.

the collection

Harvesting is done by cutting the top of the plant, which is the most tender and fragrant, removing whole portions with a maximum of four pairs of leaves. The basil is then transferred to containers called bins and sent for initial processing along with the relevant tax documentation, which must include the full wording of the PDO product .

the conservation

The harvested basil is packaged in labeled bags and sold to the processor.

Alternatively, after careful washing in stainless steel tanks, the basil is preserved as a semi-finished product: the leaves are finely chopped and mixed with natural ingredients suitable for preservation (typically salt and oil) and chilled at low temperatures to maintain its original color and organoleptic qualities.
